Although not native to Ireland, the shockingly green color of artificial mint means that St. Patrick’s Day has become almost synonymous with mint-flavored food and drinks, especially frozen ones. At Dino-Bite Snacks in Disney’s Animal Kingdom, the current seasonal ice cream treat is the St. Patrick’s Day Ice Cream Sandwich. For $6.99, you’ll get two enormous double chocolate chip cookies with a mint chocolate chip ice cream filling. The entire creation is then rolled in shamrock sprinkles.
First, the good news. This cookie, like other seasonal offerings, is a huge portion size that can be messily split between two people. If you like mint chocolate chip ice cream, you’ll love the creamy and refreshing bite of the mint and chocolate blend.
What was less ideal for us was that the cookies itself were crunchy, and this was made even more noticeable with the shamrock sprinkles. Call us old-fashioned cookie sandwich people, but when it comes to a chocolate cookie for an ice cream sandwich, we like the almost chewy kind that you’d get for an ice cream sandwich bar. (You know the kind that came in white wax wrappers and would leave chocolate residue on your fingers.) Having the cookie be crunchy, although tasty, just felt a bit odd.
