We’ve made no secret in the past of our love for Jaleo by José Andrés at Disney Springs, so it makes us very happy to see that Chef José has been hard at work to add more delicious offerings to the menu. There’s a couple of new prix fixe courses along with new tapas in a few different categories, so we’ve run down the menu to see what’s new!
One of the big changes at Jaleo is the addition of three new prix fixe courses. First and foremost is the Jaleo Experience, a tailored menu featuring “A tasting of the classic and traditional tapas in addition to some original favorites” for $95 per person. Additionally, two prix fixe drink courses include a Sherry Tasting for $25 and a “Spanish Sips” menu for $40, which includes “specially selected Spanish wines and beverages to pair with your Jaleo Experience menu.”
The ¡Buen Provecho! menu has been cut down from six choices to five, eliminating the 24-month cured serrano ham. But fear not, for that has moved to the Cured Meats section with two other new items:
- Spreadable cured sausage from Mallorca made with iberico pork and Spanish pimentón served with honeycomb and toasted bread—$15
- 48-month cured ham from the legendary free range, acorn-fed, black-footed pigs of Spain, hand carved—$30
There’s one new cheese available as well: Murcia al vino, a semi-soft goat cheese immersed in red wine paired with honey, rosemary, and pine nuts shortbread and PX reduction.
The Vegetables section also has a new addition to the menu— the Catalan “coca” with roasted vegetables and boquerones for $14. In its stead, the Sauteed button mushrooms in a garlic and white wine sauce has been eliminated.
Additionally, a new soup and a new salad have been added to the Soups & Salads menu, with the Classic chilled Spanish soup made with tomatoes, cucumbers, and peppers being retired:
- Beet salad with Valdeon blue cheese, pistachios, and citrus with a sherry dressing—$14
- Beet gazpacho with goat cheese—$12
Two new fishy dishes join the From the Fryer menu:
- Fried cod and potato fritters with honey alioli—$14
- Andalusian style fried squid with squid ink alioli—$14
Also new in the Sandwiches section is the Sobrassada and Manchego cheese pressed sandwich with honey for $18.
Finally in “José’s Way”, the priciest addition to the menu reveals itself in 1oz of Royal Ossetra caviar, coming in at a whopping $155.
The seafood section sees five new additions to join the shrimp, with the salmon being retired:
- Seared fish of the day with stewed vegetables—$16
- Head-on shrimp with garlic and extra virgin olive oil prepared as Jose does in summer—$29
- Traditional toasted pasta “paella” with head-on shrimp, squid ink, calamari sofrito, and alioli—$31
- Traditional “paella” made with toasted pasta with shrimp and squid sofrito—$28
- Charcoal grilled octopus with potatoes and tomato confit—$22
Additionally, Meats has one new addition: Chicken, pork, and foie canelones with béchamel sauce for $18.
Two new large plate items are available:
- Josper grilled rack of lamb with rosemary sauce and honey alioli—$42
- Josper grilled secreto Ibérico with pan con tomate, mojo verde and honey mustard alioli—$85
And finally, three new desserts join the menu:
- Basque goat cheesecake served with seasonal sorbet—$14
- Compressed pineapple with Spanish rum, lime, and mint—$10
- Selva Negra—$14
The last one commemorates the 50th Anniversary of Walt Disney World with a decadent mousse made of Manjari 64% chocolate atop a crunchy feulletine base with black cherry chocolate sponge cake and topped with a chocolate glace.
