The biggest party of the year is finally here as Mardi Gras kicks off at Universal Studios Florida from February 5 – April 24. Food booths around the park celebrate international cuisine, including two new, unique booths featuring “Floribbean” (a portmanteau of Florida and Caribbean) dishes.

Conch Fritters: Flash fried conch served with grilled pineapple and a pineapple rémoulade – $8.99- Buttermilk Strawberry Shortcakes: Marinated strawberries, basil mascarpone cream, orange blossom honey on a buttermilk biscuit – $4.99
- Buttermilk Lemon Blueberry Shortcakes: Blueberry compote, basil mascarpone cream, orange blossom honey on a buttermilk biscuit – $4.99

*NEW* Conch Fritters – $8.99
Flash fried conch served with grilled pineapple and a pineapple rémoulade
The conch fritters had a nice crispy outside. However, the inside had an almost pudding-like consistency, with chewy bits of conch.
The sauce is sweet with a pineapple flavor.
We didn’t love these. They’re a bit fishy and the texture is off-putting.
*NEW* Buttermilk Strawberry Shortcakes – $4.99
Marinated strawberries, basil mascarpone cream, orange blossom honey on a buttermilk biscuit
The strawberries are fresh and have a firm texture. The berries blend well with the basil mascarpone crème and honey.
It’s good, but it’s missing that little something extra to push it over the top. Both shortcakes are a good festival value, but if you’re picking between the two? Definitely go with the blueberry.

Blueberry compote, basil mascarpone cream, orange blossom honey on a buttermilk biscuit
The lemon blueberry compote is a tad sweet with just a hint of lemony tartness. This reminds us a bit of a blueberry blintz.
The basil mascarpone cream is amazing. We’d love to have this just by itself. The buttermilk shortcake is halfway between shortcake and a biscuit. The honey drizzle is a nice little topper that adds a bit of rich sweetness.
*NEW* Goombay Smash – $8.00 for 9 oz., $13.00 for 12 oz. souvenir cup
Cruzan Aged Dark Rum, Don Q Coco Rum, Grand Marnier, Coco López Cream of Coconut, pineapple, orange, and lime juice
This is a great take on the piña colada! The lime gives it a bit of tartness and the cream of coconut gives it a hint of coconut that’s complementary rather than overpowering.
You can taste the rum without a strong alcohol taste. This was one of our favorite drinks of the festival!
*NEW* Swamp Head Wild Night: Honey Cream Ale (5% ABV) – $6.00 for 9 oz., $11.00 for 12 oz. souvenir cup
From Swamp Head: “Wild Night is light and delicate, yet bursting with flavor. We add local honey to a traditional cream ale, and a touch of hops to update this American classic. Enjoyable anytime you’re thirsting for a crisp, clean beer. Our honey cream ale is what light beer should bee!”
