April may bring showers, but it also brings new snacks to Disney World!
Two new COCONUT treats!
That means MORE Easter goodies, Earth Day treats, and new cookies and cakes at one of our favorite dining spots, Gideon’s Bakehouse. We just recently stopped by Gideon’s to check out the new cake and cookie of the month, and they are both dedicated to COCONUT. 
The cookie of the month is the Toasted Coconut Caramel Cookie for $6 — it’s Gideon’s classic chocolate chip cookie (which we already LOVE) mixed with salted caramel and coconut cream and topped with shaved toasted coconut flakes.
So how does one of our favorite cookies work with this coconut upgrade? We’ll tell ‘ya — it’s DELICIOUS. You still get that rich chocolate chip cookie taste, but there’s also a hint of caramel and another hint of coconut with each bite, which works well with the classic chocolate chip cookie flavors.
Gideon’s cookies are MASSIVE and we love it!
This cookie is VERY sweet, and the only thing we thought that it was missing was more caramel to balance out that rich chocolate flavor more. The toasted coconut is also really nice and gives the cookie a nice crunch. BUT the coconut on the outside of our cookie kept falling off!

The cake slice of the month is Coconut Cream Cake, made with three layers of vanilla cake with coconut cream buttercream and salted caramel, topped with coconut shavings. Note that this slice is only available on weekends!

So here’s the thing, this cake is VERY coconutty, so you’re going to have to love coconut to appreciate it. It’s also VERY sweet because of all the buttercream. But yeah, the coconut flavor is STRONG with this treat.
This thing is MASSIVE
The cake itself is SO moist and the crunch from the coconut adds a little extra texture (we wish there was even more!). Again, this is a massive piece of cake that is VERY rich, so it’s easily shareable (or just take the extra home and snack on it for a few days — it’s up to you). The cake slice is $9.
