Shi Wasu Holiday Kitchen is a staple of the Japan Pavilion during the 2022 EPCOT International Festival of the Holidays. With delicious soba, intriguing cocktails, and of course, an actual sushi tree, this is one of our favorite booths of the festival, year after year.

- New Year Celebration Soba: Buckwheat Soba Noodles in a Hot Dashi Soup with Yuzu, Shrimp Tempura, Kamaboko Fish Cake and Chopped Green Onion – $8.50
- Mochi Cake: Gooey Rice Cake made with Rice Flour and served with Hojicha Cream, Strawberry, Tangerine and Sweet Red Beans – $6.00

Sushi Tree – $7.50
Sushi Roll with Krab Meat and Cream Cheese topped with Tempura, Ikura Salmon Roe and Spicy Mayonnaise
This was delicious! The tree shape gives it a very Christmassy feel.
The cream cheese balances out the sushi, while the boba tastes like soy sauce. They explode in your month.
It’s a basic sushi roll, but it’s elevated with the spicy mayo and the presentation is adorable. This one’s a winner.
New Year Celebration Soba – $8.50
Buckwheat Soba Noodles in a Hot Dashi Soup with Yuzu, Shrimp Tempura, Kamaboko Fish Cake and Chopped Green Onion
This was a large serving. The broth is salty and has a good miso flavor. There are plenty of noodles, which taste as expected — if you’ve never had soba at any of the festivals (or at a Japanese restaurant), they’re made with buckwheat, giving them an earthy, hearty flavor compared to most other noodles. There’s also a nice-sized piece of shrimp tempura right in the middle.
The only other accompaniments are two large pieces of fish cake, which is a traditional ramen topping, and some green onions. We wish there were a little more, like carrots or mushrooms, but that’s not usually part of Japanese soups anyhow. It wasn’t bad, though, and we would have it again if we were in the mood for a hot soup.
*NEW* Mochi Cake – $6.00
Gooey Rice Cake made with Rice Flour and served with Hojicha Cream, Strawberry, Tangerine and Sweet Red Beans
This one was tough to cut. The fruit offsets the density of the mochi and sweetness of the red bean.
The mochi itself tastes like uncooked flour, with hints of cinnamon throughout.
Every aspect balances each other, making for a great dish.
Ichigo Milk Boba – $6.50
Cranberry and Yuzu Cream drink featuring Japanese Calpico Soft Drink and Popping Strawberry Boba Pearls (Non-Alcoholic)
This is a very cranberry-forward drink that mixes well with the yuzu. The popping bobas are a nice touch. It’s light, fruity, and very sweet. The whipped cream on top didn’t even melt, somehow—it stayed intact the entire time. The only drawback is that it’s small, but this would be great for kids.
*NEW* Japanese Christmas Punch: – $8.00
Shōchū, Plum Wine, Cranberry and Lemon
This is a very plum wine-forward drink. It has a light lemon flavoring in the background, which helps make it very easy to drink. It tastes more like a refresher, and we would like to get it over ice if the opportunity arose.
There’s not a ton of alcohol taste in it, but we would get this again.
*NEW* Ozeki Sake Platinum: Junmai Daiginjo ($24/bottle) – $8.00
Ozeki Sake describes their sake as “floral, fruity, [and] smooth,” adding “this Junmai Daiginjo has a bright, rich fruity flavor that lingers.”
