The Deconstructed Dish is a staple of the 2023 EPCOT International Festival of the Arts. Taking classic dishes such as a BLT, key lime pie, and more, then literally deconstructing them and turning them into different forms! It’s the same taste you’re used to, in a completely new way of eating it.

- Deconstructed BLT: Crispy Pork Belly, Soft-Poached Egg, Onion Bread Pudding, Watercress Espuma and Tomato Jam – $7.00
- Deconstructed French Onion Soup: Beef Broth Ravioli, Gruyere Cream, Onion Bread Pudding and Onion Textures – $6.50
- Deconstructed Key Lime Pie: Flexible Key Lime Curd, “Key Lime” Mousse, Graham Cracker Cake and Meringues – $6.25

This year, the Deconstructed BLT swaps the brioche for an onion bread pudding.

Deconstructed BLT- $7.00
Crispy Pork Belly, Soft-Poached Egg, Onion Bread Pudding, Watercress Espuma, and Tomato Jam
The pork belly is very tough to cut. It also has mustard seeds on it.
It’s very dry, crunchy, and unmarinated, making it the weakest part of the dish.
The onion bread pudding is delicious and you get a good amount of that onion flavor throughout the whole thing. It’s nice and soft on the inside, but has a slight crispiness on the outside.
The egg was cooked well and perfectly runny.
The rest of the dish was delicious, but the pork belly was overcooked, which proved distracting from the rest of the dish.
Deconstructed French Onion Soup – $6.50
Beef Broth Ravioli, Gruyere Cream, Onion Bread Pudding and Onion Textures
A strange idea that played out as the weakest dish here. The flavors are too intense, too rich, very pungent. It’s basically a giant ravioli in French onion soup broth.
Deconstructed Key Lime Pie – $6.25
Flexible Key Lime Curd, “Key Lime” Mousse, Graham Cracker Cake, and Meringues
This was top tier. A perfect balance of tart and sweetness, and the presentation allows you to distribute ingredients as you wish.
The cake is moist and flavorful, a highlight for us.
You get a nice serving size, and it also takes a great photo.
Deconstructed Apple Pie à la Mode (Non-Alcoholic) – $4.50
Apple-Cinnamon Gelato, Cinnamon Apple Cider, Apple Pie Filling, and Streusel
As you would guess, this has a prevalent apple flavor. The streusel nicely counters the sweetness with cinnamon. The bottom layer of filling doesn’t distribute when you sip, so grab a spoon to eat the cream and apple chunks. The cup is a nice touch.
