The 2023 Universal’s Mardi Gras: International Flavors of Carnaval has begun with a ton of food booths featuring global cuisine. Just outside London near the bridge to Springfield is a booth for Belgium.

Belgium is an easy winner and will be one of our most recommended booths at Mardi Gras this year.
The Liège waffles are absolutely incredible and capture that delightful pearl sugar crunch in each bite. It’s almost difficult to choose which one was the favorite, but the berries and cream would be a great option for breakfast and the s’mores would be great for a decadent treat.
The berries and cream one is a little more simple, allowing the waffle to be the star.
The strawberries don’t make the waffle soggy at all, but just allow the flavor to soak in a bit. The waffle still has that sugar crunch.
The whipped topping is sweet and the strawberry and cream crumbles are a nice touch.

The Liège waffle was so good, it was hard to believe the s’mores one would be even better.
This was heavenly. Picture the best part of s’mores fries on a waffle.
Chocolate chips, chocolate sauce, marshmallows and marshmallow cream, and crumbles of Graham cracker all work together to provide the ultimate s’mores toppings on a beautiful and perfect Liège waffle.
This is crunchy and sweet and highly satisfying. We’re already craving another.
Brussels Frites – $5.99
crispy seasoned fries served with Andalouse and Joppiesaus sauces
A slightly different version of this was available in 2021. Instead of seasoned fries with three sauces, it’s basic fries with two sauces.
These sauces were just as good as we remember. The fries were good, but we would totally eat a fork with the Joppiesaus on it, so it really didn’t matter what they served with the sauce. It’s like a spicy curry kind of flavor.
The Andalouse reminds us of Thousand Island dressing or ketchup mayonnaise. It’s the simpler of the two. Pro tip: buy a pretzel or an additional side of fries somewhere else because the sauce is so good, you won’t want to waste it.
