We’ve seen stores close in Disney Springs, old character meet-and-greet locations return to the parks, and new restaurants open — sometimes it feels like EVERYTHING is changing in Disney World.

For example, a LOT has changed at EPCOT as it continues to undergo a massive multi-year transformation. In fact, there’s construction all over the park! Even one classic ride in the Magic Kingdom has closed to be re-themed as a brand new ride. Disney World restaurants are changing, too, including one Disney Springs restaurant that just revealed a brand-new menu!

Jaleo by Chef José Andrés features a Spanish-inspired menu of tapas with signature dishes such as paella, cured meats, Spanish cheeses, and more. Well, Jaleo is getting a new menu for the summer with some brand NEW dishes. 

Here’s what you’ll find on the new menu:

• Cono de Atún “Gilda” — Cone of Tuna Tartare, Modern Olive, Cantabrian Anchovy and Piparra Pepper for $8
• Gazpacho Estilo Algeciras — Classic chilled Spanish soup made with Tomato, Cucumbers, and Green Bell Peppers for $10
• Ensalada de Aguacate y Mojo Verde “Spanish Diner” — Avocado, Mojo Verde and Goat Cheese Salad for $13
• Piquillos Rellenos con Brandada de Bacalao — Stuffed Piquillos of Bacalao and Potato served with Manchego cheese and a Bechamel Sauce for $16
• Mejilones a la Brasa con Mojo Verde — Mussels cooked in Josper served with Mojo Verde for $16

• Lubina a la Pobre — Whole roasted Branzino served with Potatoes, Olive Oil, and Fresh Herbs for $56
• Ensalada de Tomate con Ventresca — Heirloom Tomato Salad served with Red Onions, Piparra Peppers, and 4 oz. of conserved Tuna Belly from Asturias for $34
• Secreto Iberico de Bellota — Secreto Iberico cooked on the basque grill and served with Pan con Tomate for $105
• Pintxos Morunos de Cordero — Basque Grilled Lamb Skewer with Andalusian Spices for $18
• Berenjenas con Miel — Fried eggplant with honey and lemon zest for $12
• Atún Crudo con Aguacate — Thinly sliced tuna served with avocado and a citrus dressing for $18

This is one of the biggest menu changes that’s happened at Jaleo since it opened in 2019, so be sure to check it out the next time you’re in Disney Springs. Also, be sure to make advance dining reservations if you want to visit; it could book up fast if you’re not careful!
