For today only, a Stitch cake is available at Cosmic Ray’s Starlight Café in Magic Kingdom. The cake celebrates 626 Day, June 26, because that’s Stitch’s experiment number.

Stitch Blueberry Lemonade Mousse Cake – $8.29

Blueberry ice cream mousse, lemonade-blueberry caramel, vanilla cake, and blue pineapple glaze

Stitch is sometimes roaming Tomorrowland these days and he loved seeing the cake inspired by him.

The domed cake resembles the top of Stitch’s head, complete with his big ears.

This cake is delicious and we wish it was a permanent menu item. The vanilla cake is light instead of dense.

The cake is covered with lemonade-blueberry caramel, but we didn’t taste any caramel flavor.

The ears are made of white chocolate.

The blueberry ice cream mousse tastes like a light blueberry whipped cream and pairs well with the lemon filling, which is cool in temperature. It tastes similar to lemon curd.

This is a perfect, refreshing treat for summer!

We absolutely recommend it and Stitch definitely approves.
