A fresh and uniquely Disney take on a comfort food staple was recently introduced at the Walt Disney World Resort. Chicken Stuffed Mickey Waffles are now on the menu at Rix Sports Bar and Grill at Disney’s Coronado Springs Resort.
The Chicken Stuffed Mickey Waffles are served as part of the breakfast menu at Rix Sports Bar and Grill. The restaurant offers breakfast daily from 7:00 a.m. to 10:30 a.m.
Chicken Stuffed Mickey Waffles – $18.00
Our twist on a new favorite, four Mickey waffles stuffed with chicken tenders and maple syrup. Served with herb butter house potatoes.
“Wow” — in every sense of the word — was our immediate reaction to this dish.
The presentation is unique and quite cute. The waffles are served on a wood-topped board and come with a small cup of maple syrup. They’re topped with a sprinkle of sugar and do have some structural integrity thanks to the wooden stick at each waffle’s base. It’s a creative take on a relatively common food, and we commend it for that.
The dish, unfortunately, lacks balance. The waffle-to-chicken ratio leaves a bit to be desired; there is way too much waffle for the amount of chicken you’re getting. The waffles, while identical to those you could find at most breakfasts throughout Walt Disney World Resort, are tasty. They’re crispy on the outside and moist on the inside — nothing earth-shattering, but perfectly acceptable.
There’s room for improvement with the chicken. It’s the same chicken nugget that you’ll find at Walt Disney World quick service restaurant, and again, it’s simply not big enough compared to the size of the waffle. We’d estimate that the dish is 30% chicken and 70% waffle, and thus, the chicken gets a bit lost.
The chicken isn’t helped by its seasoning (or lack thereof). The nugget would be immensely aided by something that would provide a more noticeable savory counter punch to the sweetness of the waffle. The dish lacks the balance and cohesion of traditional chicken and waffles.
The breakfast potatoes served alongside the Chicken Stuffed Mickey Waffles were, again, quite standard. They’re the same that you could find at several breakfasts throughout Walt Disney World Resort. That said, they are a nice complement to the dish’s star, with the deep-fried diced potatoes with sautéed onions and peppers providing savoriness in an otherwise sweet breakfast.
We generally liked the Chicken Stuffed Mickey Waffles and would recommend them. While they’re not as substantial or tasty as conventional chicken and waffles, they’re still a nice option if you’re tired of the standard breakfast offerings. They’re a cute addition to Rix Sports Bar and Grill’s breakfast menu and definitely stick out as one of the more unique food items at Disney’s Coronado Springs Resort.
