Well, Gideon’s Bakehouse has done it again! A brand-new Shadowcake is making its debut this weekend, and if you’re a fan of cookie butter, you might want to make a trip to Disney Springs.

The Cookie Butter Shortbread Shadowcake is the latest creation from Gideon’s Bakehouse, and just LOOK at those layers! We’re talking browned butter shortbread, chewy caramel, soft vanilla bean cake, and cookie butter ganache, all covered in a thick coating of dark chocolate. As if that weren’t enough, the whole thing is finished with a sprinkling of crushed Biscoff cookies.

If you’ve ever tried one of Gideon’s massive, scratch-made Shadowcakes, you know these aren’t your typical little snack cakes. This one looks especially rich, with plenty of cookie butter goodness tucked between those layers.

When Can You Get the Cookie Butter Shadowcake?

According to Gideon’s Bakehouse, the new Cookie Butter Shortbread Shadowcake will be available at both Gideon’s locations on Saturday, October 10, and Sunday, October 11, 2026.

There are a couple of things to keep in mind before heading out. The Shadowcakes are available while supplies last, and purchases are limited to two per person.

Gideon’s hasn’t shared a price for this particular Shadowcake in its Instagram announcement, but if you’re planning to visit Disney Springs this weekend, this might be a good excuse to stop by and see if you can snag one.

Between the cookie butter ganache, caramel, shortbread, and dark chocolate, I don’t even know which layer I’d want to try first. What do you think?
