Ingredients

  • 4 cups all-purpose flour
  • 3 tablespoons baking powder
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 2 tablespoons margarine
  • 2 tablespoons shortening
  • 3 eggs, beaten
  • 1 1/4 cup milk
  • 1 cup golden raisins

Recipe

  1. Preheat oven to 425°F.
  2. Sift the dry ingredients (except the raisins) together in a large mixing bowl. Using your fingertips, work the margarine, and shortening into the dry ingredients until it resembles a coarse meal.
  3. In a separate bowl, combine the beaten eggs and milk, then stir into the flour mixture just until the dough comes together. Fold in the raisins.
  4. Lightly flour your workspace, then roll the dough out to about 1/2″ thickness. Use a 2″ round cutter to cut about 40 scones from the dough. Transfer to a lightly greased baking sheet and bake about 12 to 15 minutes, until light brown. (For slightly sweeter scones, sprinkle extra granulated sugar on top before baking.)

Serve immediately with Devonshire cream or butter and jam.
