REVIEW: Gideon’s Bakery Turns Up the Heat with Eternal Flame Cookie and Cake, Fire & Iced Nitro Cold Brew for February at Disney Springs

The Valentine’s Day season is upon us as we roll over into February, and Gideon’s Bakehouse is ready to celebrate with a new cookie, cake, and cold brew! Gideon’s has a special cookie available now through February — the Velvety Five Flavor Chocolate Cookie — plus the Eternal Flame Cake and the Fire & Iced Coffee Cold Brew.

This month’s menu features Valentina Broccha, a new vampire character.

Velvety Five Flavor Chocolate Cookie – $6

A cookie laced with special house-made ancho, cayenne, and cinnamon spice mix, infused with a magical essence of cherry and topped with chocolate-covered cherries.

Gideon’s Bakehouse listed this cookie as the “Velvety Five Flavor Chocolate Cookie,” but the placard calls it the “Eternal Flame,” which was last February’s cookie of the month. This cookie is very similar to the Eternal Flame from 2021 but with more cherry flavoring throughout.

This is really interesting. On the first bite, you get the chocolate and cherry immediately, then the heat kicks in and lingers.

You taste each component listed, and this one has a bit more cinnamon flavor than the coffee. The cherry fights back at the heat with great sweetness and tartness, and the chocolate smooths it all over.

The large cherries are chocolate-covered and add a nice hit of sweetness when the heat gets too much.

This is a cool treat with a layered palate. The heat does linger, but it’s not overpowering. If you tried last year’s Eternal Flame, this is similar to the mild version with additional cherry flavoring.

Eternal Flame Cake – $9

Red cherry buttercream, chocolate fudge buttercream, and Eternal Flame spice with “bleeding” cherry roses

The chocolate cake itself is plain chocolate. Always well baked, moist, and delicious — a favorite of ours.

The chocolate buttercream has spice. The chocolate tastes a little different here — fudgier — and the heat is present but not as strong as the other treats.

The red icing is also mild cherry in flavor, but you get more vanilla with a hint of tart at the end.

All in one bite, it’s mostly chocolate with a hint of cinnamon and fudge in the background.

Fire & Ice Coffee Cold Brew – $6

A smooth Mocha Nitro Cold Brew with a warm spicy finish. Topped with red sugar crystals.

This definitely has a kick. We went with the regular heat level, though you can ask for more.

The coffee gets a little lost under it all; the mocha is secondary, and the heat reigns supreme. It’s not a cinnamon heat, but more peppery.

It says the crystals “bleed into your drink,” but there’s a bit of powder at the bottom, almost like seasoning that hasn’t been fully mixed in.

This is a fun, unique coffee — if you’re a fan of heat, but if you’re looking for a sweet coffee to kickstart your day, we’d go with another of their classics.

Fire & Ice Pins – $15 each
